Blackberry Muffins

INGREDIENTS

  1. 5 cups of ground and blanched almond flour.
  2. 1/3 cup of monkfruit sweetener.
  3. 5 teaspoon of baking powder.
  4. 1/4 teaspoon of pink Himalayan salt to taste.
  5. 1/3 cup of melted coconut oil or butter.
  6. 1/3 cup of almond milk.
  7. 3 large eggs.
  8. 1/2 teaspoon of pure vanilla extract.
  9. 3/4 cup of blackberries.

INSTRUCTIONS

    1. Preheat the oven to 350 degrees F, place parchment papers or baking papers at the bottom and sides of a 10-well muffin pan then set aside while you prepare the ingredients. Properly sift the flour into a mixing bowl, add in the sweetener, baking powder, and salt to taste then mix to combine. Add in the berries the coat with the flour mixture.
    2. In another mixing bowl, add in the melted oil or butter, milk, eggs, and vanilla extract then mix to combine. Pour the mixture into the flour mixture then mix everything to combine (gently, without breaking the berries).
    3. Pour the batter into the muffin pan and bake the muffins for about twenty-four to twenty-six minutes until baked through. Let the muffins cool for a few minutes then serve.
