Strawberry Cupcakes

I love a good cupcake! Bake these delicious cupcakes today! These cupcakes are sweet and moist and perfect for all occasions. Decorate with sprinkles or fresh cut strawberries.

  1. 1/2 cup of strawberries.
  2. 1 cup of blanched almond flour.
  3. 2 tablespoons of coconut flour.
  4. 1/4 cup of granulated sweetener.
  5. 1/2 teaspoon of baking powder.
  6. 1/4 teaspoon of salt to taste.
  7. 2 large eggs.
  8. 4 tablespoons of unsalted butter.
  9. 1 teaspoon of vanilla extract.
  10. 1/2 teaspoon of liquid monk fruit.

Strawberry buttercream frosting

  1. 1 stick of unsalted butter.
  2. 5 tablespoons of powdered sweetener.
  3. 1/8 teaspoon of salt to taste.
  4. 2 teaspoons of liquid monk fruit.
  5. 1 teaspoon of vanilla extract.
  6. 1/2 cup of strawberries.


    1. Use a blender to blend the berries (or chop them up) then pour it into a cooking pot. Place the pot over medium heat then cook (while stirring) until the liquid releases and the berries become soft and fragrant. Once cooked, let the strawberry cool sit for a few minutes and thicken, set aside.
    2. Preheat the oven to 350 degrees F, place the butter in a sauce pan and let it melt, set aside. Using a medium mixing bowl, add in the almond flour, coconut flour, sweetener, baking powder, and salt to taste then mix properly to combine, set aside. In another bowl, add in the eggs, vanilla extract, and liquid sweetener then mix to combine. Add in the melted butter and mix again to combine.
    3. Properly combine the flour and egg mixture, add in the strawberries then beat everything to combine until smooth. Pour the mixture into the wells of a greased or lined muffin tin and bake for about twenty minutes until baked through, set aside to cool while you make the frosting.
    4. Cook the strawberries just as you have done in (1) above then pour it into a bowl, set aside. Add the butter to a mixing bowl and beat with a hand mixer. Add in the powdered sweetener then beat to combine. Add in the liquid sweetener then beat to combine. Add in the vanilla extract and strawberry the beat to combine. Frost the cupcakes and serve, enjoy.
